Effect of Pre - and Postharvest Factors on Nitrate Contents of Radish and Chinese Cabbage



Abstract
This study was conducted to evaluate harvest date, cultivation area, plant part, storage temperature, and PE film packaging on nitrate levels in fresh radish and Chinese cabbage. Nitrate content showed a highest level at sample harvested in mid-Nov. 1999, as harvest date was delayed nitrate content was decreased. Nitrate contents were also variable depending on the cultivation area and plant part. Radish contained higher level of nitrate at epidermis than xylem and Chinese cabbage showed higher content at outer leaves than wrapper leaves. Substantial loss of nitrate and accumulation of nitrite occurred more evidently in samples held at 20¡É for 45 days. This conversion of nitrate to nitrite was inhibited by low temperature and PE film packaging treatment.
